The scent of warm baked Pumpkin Bread will fill your home with the spicy scent of Halloween and Thanksgiving. This easy to use recipe takes no time at all to mix up and it's a great healthy snack. I think your family will love it as much as mine!

Instructions

Things You'll Need:

  • 1 30 oz. can of Libby's Easy Pumpkin Pie Mix (already spiced)
  • 3 C. sugar
  • 1 C. vegetable oil
  • 4 large eggs
  • 1/2 C. water
  • 3 C. flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 C. chopped pecans or walnuts
  • 1 tub of cream cheese flavored frosting (optional)
  • 2 bread pans (or several small)
  • stand mixer with large bowl or 1 large bowl to hand mix
  • measuring cups
  • measuring spoons
  • wisk or large spoon if hand mixing
  • large knife for chopping
  • butter knife for frosting
  1. Step 1

    Preheat oven to 350.

  2. Step 2
     

    MIX: In large mixing bowl empty the can of Pumpkin Pie mix, the sugar and oil. Now mix in one egg at a time, blend in water and mix well.

  3. Step 3
     

    Dry Ingredients: Measure your flour and dump into your mixing bowl. Now add in your baking soda and salt. Mix very slowly blending the dry ingredients into the wet. When your mixture appears completely mixed it will be thick but smooth. Gradually mix in your chopped nuts.

  4. Step 4
     

    Now you are ready to pour your mixture into the bread pans. It is not necessary to grease the pans do to the amount of oil in the recipe. Pour equal amounts into each pan. Place in preheat oven and bake for 1 hour. Remove from oven, let cool slightly, loosen from sides of pan and turn over to remove from pans. Let cool until bread is "just warm" frost, slice and serve.

Tips & Warnings
  • To loosen the bread from the sides of the pan use a butter knife inserted between the bread and the pan. Slide it all the way around until all sides are done, when turned over the bread should fall right out.
  • The recipe calls for 1 C. chopped nuts, however you can add more or less. (I love adding more!)
  • The recipe also calls for cream cheese frosting although I added that this is optional I highly recommend you try it this way. YUM!
  • Be sure not to frost the bread while it is too hot. The bread may fall apart as you frost or the frosting will melt too much and run right off.

on 11/7/2009 Yummy bread, though I did cut down on the sugar because the pumpkin is already sweetened. While the pumpkin provides some good health benefits, I think it's a stretch to call this a "healthy snack" considering the amounts of sugar and oil in the recipe. ;)
