How to Make Spinach Lasagna with Turkey

Lasagna is yummy, but it can be a bit unhealthy. Here's a delicious recipe that uses spinach (yay for iron) and turkey (the leaner ground meat) for a healthier version of a classic Italian meal.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • uncooked lasagna noodles
  • 1 big jar of mushroom Prego spaghetti sauce
  • A pound or so of ground turkey
  • 1 package of frozen spinach
  • 15 oz ricotta cheese (fat free)
  • 3 cups of shredded mozzarella (low fat)
  • 1 cup of shredded mozzarella (low fat)
  • 15 oz of shredded parm (low fat if you can)
  • 2 large eggs
  • Some nutmeg
  • 13 x 9 inch pan
  • Oven
  • Hungry people in the mood for lasagna helps.
  1. Step 1

    Start by browning the turkey meat. Pour the jar of sauce into saucepan and simmer for 10 minutes.

  2. Step 2

    Cook spinach according to package. Drain excess water and mix with the remaining ingredients to create your spinach-cheese mixture.

  3. Step 3

    Layer a bit of the sauce at the bottom, then noodles, more sauce, then cheese/spinach mixture (use half), repeat.

  4. Step 4

    Layer remaining sauce on top. Sprinkle with rest of cheese. Cover with foil, bake at 350 for about 50 minutes

Tips & Warnings
  • Make sure to put a little sauce on the bottom of the pan. It will help prevent the noodles from sticking.
  • Remove the foil for the last 10 minutes of cooking for a crispier top.

on 7/9/2009 Ok, so maybe the cinnamon was a bad idea (didn't have nutmeg so I substituted)... but it still tasted great!!

on 7/9/2009 Thanks for the easy recipe. I did this today and it's in the oven right now! Can't wait to eat it, yum!

I didn't have mushroom spaghetti sauce, so I used the regular Ragu sauce I had in my pantry. Also, I didn't have nutmeg so instead I used a bit of cinnamon! I think it will still taste delicious!
