How to make an easy carrot cake with coconut cream chees frosting

delicious, simple carrot cake

Instructions

Difficulty: Easy

Things You’ll Need:

  • cake
  • 2 cups flour
  • 2 cups sugar
  • 2 tsp baking soda
  • 4 eggs
  • 1 cup cooking oil
  • 4 cups grated carrots (bag precut from grocery store)
  • 3/4 cup chopped walnuts (optional)
  • frosting
  • 4 tbsp butter
  • 2 cups coconut
  • 8 oz cream cheese
  • 2 tsp milk
  • 3 1/2 cup confectioner sugar
  • 1/2 tsp vanilla

Step1
Preheat over to 350 degrees. Mix all of the cake ingredients together and pour into 3 greased and floured 9" pans. Cook for 25 minutes and let cool.
Step2
Melt 2 tbsp of butter in frying pan, add coconut and brown. Paper towel coconut and let cool. Mix remaining frosting ingredients in bowl adding 1 3/4 cups of browned coconut.
Step3
Place first layer of cake on a plate and frost the top, place second layer of cake on top and frost the top, finally add the last layer of cake and frost the top. Sprinkle remaining coconut over the frosting.

Tips & Warnings

  • Frosting is not ment to cover the entire cake... to cover entire cake double the frosting recipe
