This recipe for sweet potato fries is a guaranteed kid-pleaser. Read the tips after the recipe for more ideas to add vegetables to your kids' diet. It's not that hard, and your kids may not even know you've upped their vitamin count.

Instructions

Things You'll Need:

  • A couple of sweet potatoes, a couple of carrots, and a couple hundred peas. That's it!
  1. Step 1

    My kids love sweet potato fries! Here's how to make them. It's easy!

    Peel two sweet potatoes and cut them into 20-24 slices each. Put the slices into a large bowl.

  2. Step 2

    Toss the cut sweet potatoes in vegetable oil and sprinkle with salt and pepper.

  3. Step 3

    Heat oven to 400 degrees. Bake sweet potatoes on a greased cookie sheet for 20-25 minutes, turning over the potatoes halfway through. Serve with ketchup (yes, ketchup!).

Tips & Warnings
  • One sweet potato has loads of vitamins A and C, plus calcium, iron and thiamine. And, only about 140 calories. Great food!
  • Here's another way to add vegetables -- Shred a couple of carrots and add them to your favorite spaghetti sauce. Your kids will never know they're getting a booster shot of vitamin A and beta carotene. Yum!
  • Or, try this tip to add a veggie punch to your kids' diet -- Add pureed peas to guacamole. Put a cup of canned peas into your food processor or blender. Use a potato masher or fork if you don't have a food processor or blender (whatever works to create a paste from the peas). Add the puree to the guacamole, then serve with salsa and chips. Try dipping baby carrots or sliced cucumber into the guacamole, too. Delicious!
