Things You'll Need:
- 250 grams graham crackers
- 150 grams butter
- 600 grams cream cheese
- 170 grams sugar
- 500 ml sour cream
- 4 eggs
- 1 lemon, zest and juice
- 1 tsp vanilla essence
- Handful of fresh or tinned cherries destoned
- 200 grams chocolate

Step 1
Crush graham crackers and mix them with melted butter. Line 10-inch spring form tin with greaseproof paper and press the mixture with the back of the spoon.

Separate eggs. Mix egg whites until light and fluffy.

In a separate bowl mix together cream cheese, sugar, egg yolks, vanilla and then add lemon juice and zest.

Fold egg whites carefully in the mixture and add cherries and chocolate broken in pieces. Pour into the pan.

Bake for 50 minutes at 170°c (325°F) or until golden on the top.
