Chocolate and cherry cheesecake is very popular in my house. For that extra bit of tang you can add a bit more lemon juice.

Instructions

Things You'll Need:

  • 250 grams graham crackers
  • 150 grams butter
  • 600 grams cream cheese
  • 170 grams sugar
  • 500 ml sour cream
  • 4 eggs
  • 1 lemon, zest and juice
  • 1 tsp vanilla essence
  • Handful of fresh or tinned cherries destoned
  • 200 grams chocolate
  1. Step 1

    Crush graham crackers and mix them with melted butter. Line 10-inch spring form tin with greaseproof paper and press the mixture with the back of the spoon.

  2. Step 2

    Separate eggs. Mix egg whites until light and fluffy.

  3. Step 3

    In a separate bowl mix together cream cheese, sugar, egg yolks, vanilla and then add lemon juice and zest.

  4. Step 4

    Fold egg whites carefully in the mixture and add cherries and chocolate broken in pieces. Pour into the pan.

  5. Step 5

    Bake for 50 minutes at 170°c (325°F) or until golden on the top.

Tips & Warnings
  • Chill for an hour before serving.
