I got the recipe for this bundt cake from a friend's mum and I have been making it for Easter and Christmas ever since. It is best if you leave it to stand for a day or two, however that is a mean feat in my house.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 150 g butter
  • 300 g sugar
  • 4 eggs
  • 13 g baking powder
  • 1 cup of milk
  • 350 g all purpose flour
  • Good quality cocoa or chocolate
  • Orange zest and lemon zest, raisins (optional)
  1. Step 1

    Preheat oven to 190°C (356°F) and butter the Bundt pan well. Prepare 2 bowls. Separate egg whites and yolks.

    Mix egg whites until light and fluffy.

    In another bowl mix butter, sugar and egg yolks until light and fluffy.

    Combine baking powder with flour and slowly add to the mixture. Add 1 cup of milk and mix.

    Add orange zest, lemon zest and raisins. Stir in the egg whites with a wooden spoon.

    If you love chocolate, put aside about 1/3 of the dough and melt about 65 g of chocolate and mix well. If there is no chocolate, good quality cocoa is a good alternative.

    Pour batter in the prepared pan, alternatively combining both plain and chocolate mixture.

  9. Step 9

    Put in the heated oven and bake for about 50 minutes or until the toothpick inserted in the middle comes out clean. Let it cool a bit and then turn on a prepared plate.
