There is nothing quite as lovely as a cup of warm soup on a cold day. It is comfort food but it is also good for you.

Instructions

Things You'll Need:

  • 1 kg of fresh spinach
  • 1 chopped onion
  • 55 grams butter
  • 40 grams flour
  • 9.46 dl stock
  • 1.8 dl cream
  • Salt, pepper, grated nutmeg
  1. Step 1

    Clean the spinach.

  2. Step 2

    Heat the butter. Add the onion and let simmer for a while. Add flour and cook until it gets golden.

  3. Step 3

    Add the spinach and gradually add the stock. Cook until tender. Puree in a blender.

  4. Step 4

    Return the soup to the pan and dilute with more stock if needed.

  5. Step 5

    Add salt, pepper and nutmeg to taste.

  6. Step 6

    Stir the cream in the soup, reheat and serve.

Tips & Warnings
  • Cream, fried bacon, croutons or paprika make great garnish for this soup.
  • Makes 5 to 6 servings.
