If you love carrot cake then this carrot cake recipe is written just for you. We have tried countless carrot cakes in our family but this is our favorite and is very easy to make.

Instructions

Things You'll Need:

  • Ingredients
  • 4 eggs
  • 3/4 cup vegetable oil
  • 1/4 cup applesauce
  • 1 tin crushed pineapple (squeeze out as much juice as you can)
  • 1 cup white sugar
  • 1 cup soft brown sugar
  • 3 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 teaspoons ground cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans or walnuts
  • Frosting
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans/walnuts
  1. Step 1

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 x 13 inch pan.

  2. Step 2

    In a large bowl, beat together eggs, oil, applesauce, both the white and brown sugars and the vanilla.

  3. Step 3

    Mix in flour, baking soda, baking powder, salt and cinnamon and nutmeg.
    Stir in carrots and crushed pineapple Fold in pecans.

    Pour into prepared pan.

  4. Step 4

    Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

  5. Step 5

    To make the frosting, mix all the ingredients together and beat until smooth and creamy add the pecans or walnuts. When the cake is cool add the frosting.
