How to make authentic, French Mayonnaise

If you have ever wondered how the french make their delicious, fresh mayonnaise, this is it.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 large eggs
  • 2-3 teaspoons of strained, fresh lemon juice or wine vinegar
  • 1 teaspoon of salt
  • a pinch of ground white pepper
  • 2 cups of vegetable oil
  1. Step 1

    In a mixing bowl, beat the egg yolks, lemon juice or vinegar, salt and pepper vigorously for about 2 minutes until they thicken and cling to the beater.

  2. Step 2

    Then beat in 1/2 cup of oil, a little at a time; make sure each addition is absorbed before adding more. By the time the 1/2 cup of oil has been beaten in, the sauce should be the consistency of very thick cream.

  3. Step 3

    Pour in the remaining oil in a thin, slow stream, beating constantly. Taste it for seasoning.

Tips & Warnings
  • You can also add flavor by adding 2 teaspoons of dijon mustard to the egg yolk before beating in the oil.
