Papaya should be sliced before dehydrating.

Papaya is a good source of vitamins C, A, E and K and also contains a good dose of dietary fiber. Once considered an exotic fruit, papaya can be used as an alternative to apricots and apples. Dehydrate your papaya for a healthy treat you can take along anywhere. When dehydrating, choose quality fruit that is not overly ripe. Does this Spark an idea?

Instructions

      Peel papaya, slice in half, remove seeds and rinse papaya.

      Slice papaya into 1/2 inch slices. The thinner you slice it, the faster it will dehydrate.

      Soak slices with 1 cup lemon juice to 1 quart water for two hours.

      Arrange slices on drying rack and dry in the sun or in oven at 135 degrees until papaya is not longer bendable. It should be leathery but pliable.

      Condition the fruit by leaving it in a warm, dry location to “sweat,” for about a week. Stir daily.

      Pasteurize the dried fruit by heating it in a 175 degree oven for 15 minutes. This kills any insects or eggs that might have landed on the fruit during other steps in the process.

      Store in airtight jar or bags. Can be frozen for longer storage.
