How to Make A Kugel to Die For

My mother was always the best cook in the family. She made a kugel to die for. I grew up on the South Side of Chicago where kugels were plentiful. Here in Seattle we have potlucks. Kugels are seen as exotic. If you're invited to an event, Jewish or not, here is a knock 'em dead kugel that's even better than moms.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 8 oz of broad noodles
  • 2 cups milk
  • 4 eggs
  • 1 8oz pkg of cream cheese
  • 1 cup of cottage cheese
  • 1 tsp vanilla
  • 1 stick of butter
  • 1/4 stick of butter
  • 1/2 cup raisins
  • Either 2 apples or 2 peaches
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1 cup of cornflakes or another type of flake cereal1
  1. Step 1

    Two hours before preparing take cream cheese and butter out of the refrigerator and put into mixing bowl.

  2. Step 2

    Mix cream cheese and butter in mixer until well combined.

  3. Step 3

    Add eggs, milk, cottage cheese and 1/4 cup of the sugar. Mix until almost smooth.

  4. Step 4

    Boil the noodles until done or almost done.

  5. Step 5

    Add raisins and cooked noodles to the the mixture in Step 3 and mix in with spoon.

  6. Step 6

    Apply one of those spray on oils to a 9 x 13 inch pan. Pour all the ingredients into the pan.

  7. Step 7

    Cut up your apples or peaches (whatever is in season) into sections about 1/2 inch wide. Lay these sections into the pan pushing them down into the mixture. Use approximately 3-4 sections for each row.

  8. Step 8

    Crumble the flakes in a paper bag. Sprinkle over the top of the entire kugel. Combine rest of sugar with cinnamon. Sprinkle over the top of the flakes.

  9. Step 9

    Using about 1/4 of a stick of butter, cut into about 12 small dots and add sproradically to top of the sugar and cinnamon.

    Bake at 375 degree for 45 minutes.

Tips & Warnings
  • If you bring to a potluck, reheat for about 20 minutes.
  • Wait about 10 minutes before cutting kugel into sections.
  • You could get addicted to this comfort food or decide to convert.

on 4/21/2008 your loxen kugel sounds great, as i am diabetic it is a no go for me my mouth is watering. how about your potato kugel recipe?
