How to Use a Zester

A zester or microplane has tiny holes that create thin strips from foods. Use one with foods such as chocolate, citrus fruits, onions, ginger or hard cheese. Check out the simple process that eliminates the need and danger of using a small knife.

Instructions

Difficulty: Easy
Step1
Make sure the food item you're going to zest is firm. If it is soft, consider placing it in the freezer for a few minutes to firm it.
Step2
Grab a cutting board so the shavings have a clean place to fall. Make sure that the board does not move around but has a good, non skid surface.
Step3
Grip the handle of the zester with your left hand if you're right handed or vice versa. Press the other end of the microplane on the cutting board at an angle.
Step4
Move the food item gently up one end and down the other. If you use fruit, move it in a circular area and then move down.

Tips & Warnings

  • If you only need to zest a small amount, you can cover one side of the microplane with plastic wrap. This plastic wrap will capture all of the cuttings.
  • Don't forget to rub the opposite side of the zester. Much of the food you're zesting will stick to that side.
  • You can substitute a vegetable peeler or cheese grater in a pinch. However, a microplane or zester will work best.
  • Use only the outer, colored portion of most citrus fruits. The white portion or pith is bitter.
