How to Use Fish in Brazilian Cuisine

Brazilian cuisine is flavorful. Depending upon the region, there can be a variety of recipes. There are many ways to use fish in Brazilian cooking. The key is to rely on what is fresh and in season. Use fish and other ingredients that are native to Brazil for authentic dishes.

Instructions
  1. Step 1

    Use native seasonings such as lemon, salt, chicory, chive, onion, garlic and chili. Include coconut, beans, rice, tropical palm oil and manioc meal.

  2. Step 2

    Stock your pantry with dried shrimp and dried salted cod fish. These two pantry items are used to flavor many rice and bean dishes. The fish and shrimp are reconstituted and then used in Portuguese flavored cooking.

  3. Step 3

    Make a seafood frittata using in season seafood such as shrimp, crab or white fish. Flake and mix with egg, coconut milk, lemon and vegetables. Bake and serve. The dish is similar to quiche or an omlette.

  4. Step 4

    Create a fish stew. These are very popular in Brazil because they are not expensive. Use a dense white fish like halibut or another thicker fish like grouper, flounder or red snapper. This type of fish can stand up to stewing better than flakier fish.

  5. Step 5

    Bake the fish like mackerel or use it as a stuffing in various dishes like empanadas. Salmon is excellent grilled with a thick dry rub until the outside caramelizes. Serve with grilled pineapple.
