From Quick Guide: Plan a Dinner Menu
Difficulty: Moderately Easy
Instructions
  1. Step 1

Begin the meal with a chilled salad course. Try a chilled Moroccan carrot salad, made with shredded carrots, fresh garlic, lemon juice, cilantro and flavored with traditional Moroccan spices such as cumin, paprika, cinnamon and cayenne.

  2. Step 2

Serve lamb kebabs next. Rub the meat with spices, and skewer with fresh mango. Grill 8 to 10 minutes until the meat is cooked through.

  3. Step 3

Offer guests jasmine-scented couscous. Simply cook the couscous according to the package direction. Add fresh jasmine tea leaves to the cooked couscous before serving.

  4. Step 4

Prepare an authentic Moroccan pastry: bisteeya. This is phyllo pastry wrapped around layers of chicken, eggs, a lemon-onion sauce and crushed almonds. The phyllo is coated in a delicate mixture of cinnamon and sugar.

  5. Step 5

Serve fresh fruits, such as pomegranate and figs along side meringues featuring a Moroccan flavoring, such as rose water or honey.

  6. Step 6

Offer guests a traditional green tea flavored with mint with the meal.

  7. Step 7

Serve adults champagne flavored with pomegranate juice or rose water. Sprinkle pomegranate seeds or rose petals in each champagne flute, as a pretty garnish.

Tips & Warnings
  • Serve good quality bread with every course, which guests can use in place of silverware.
