How to Use Iron Cookware

Many people avoid using iron cookware because they don't know how to use it. An iron frying pan won't warp or bend and can become virtually non-stick if you know how to use it. Cast iron cookware can last for generations if treated properly. Here are some tips to help you use and care for your iron cookware.

  1. Step 1

    Season a new cast iron pot or frying pan before using it. To season a new pan, wash it thoroughly in hot soapy water. Use a scouring pad after washing. The scouring pad will remove any loose debris from the manufacturing process. Rinse the pan very thoroughly in hot water. Dry the iron pan immediately with paper towels. While the pan is still hot, oil it with oil or shortening. Oil the new iron pan all over, including the bottom and the handle. After the pan is oiled, place it in a 200-degree oven for at least an hour.

  2. Step 2

    Keep your cast iron seasoned every time you use it. Clean and rinse it thoroughly, then dry immediately. Season the pan with shortening or oil while it is still hot. If the pan isn't hot, place it on a burner for a few seconds, then oil it. If you have cooked something in oil that has no odor, you need only wipe out the pan with a paper towel. The oil will stay in the pan and season it for you.

  3. Step 3

    Heat the iron pan before adding food when cooking. For example, if you are cooking pork chops, turn the burner on medium high to get the pan hot but not too hot. Add the oil after the pan is hot, then add the chops. Do not move them for a few minutes. After a few minutes, you can move the chops and they won't stick. This method works for most meats, including fish. As long as you season the iron cookware after each use, the pan will become non-stick.

  • Never put your iron cookware in the dishwasher.
  • Never immerse the whole pan in water overnight.
