Things You'll Need

  • 2 cups brown rice
  • 1 can black beans
  • 1 cup frozen yellow corn, thawed and cooked
  • 1 ½ cups of your favorite jarred salsa
  • 1/3 cup fresh chives, chopped
  • Handful of fresh cilantro
  • 1 tbsp. lime juice
  • Salt and pepper to taste

      Cook rice according to package directions. Do not overcook the rice or allow it to become soft as it will become mushy when added to other ingredients.

      Drain the black beans and rinse them thoroughly in cold water. Rinse the beans until the water runs clear to make sure that all of the thick starchy juice they are canned in has been rinsed off.

      Toss the rice, beans and cooked corn together in a large bowl until well mixed.

      Stir the salsa into the rice and vegetable mixture until it is well combined. If the mixture seems to be a little dry after adding the salsa, add a few additional tablespoons until it is not so dry and is the consistency you want.

      Add the fresh chives and cilantro and fold the herbs into the salad until they are evenly mixed in.

      Sprinkle with the lime juice and season with salt and pepper to taste.
