How to Make Oxtail Stew

Oxtail stew is yummy! It just takes a lot of time to get the meat fully tender to the point of enjoyable. But invest in this dish and you will have a meal that family and guests will love!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 3lbs oxtail (medium to large)
  • Large pot
  • Olive Oil
  • Salt
  • Pepper
  • A gallon of water
  • 1 Onion
  • 3 cloves of garlic

Step1
Heat the olive oil in the large pot on medium heat and throw in the oxtail. Make sure that they cover the entire pot and that none are on top of another.
Step2
Brown them on each side for about 3-5 minutes. This will draw out the fat from the oxtail into the oil. Throw in salt, pepper, chopped up garlic and onion.
Step3
After browning, pour the water in, and raise the heat up to high. Let it boil uncovered for 2 to 3 hours. The water will thicken with the juices from the oxtail, and when you can stick a fork easily into the meat, and it looks like as if the meat is falling off the bone, turn off the heat.
Step4
Let the dish cool slightly. The oxtail will be very hot with a lot of trapped heat in the bone and cartilage, so enjoy with care. The stew is good when dipped with french bread.

Tips & Warnings

  • Check occasionally to make sure that all the oxtail parts are covered in the liquid as they cook
  • Add some saffron for coloring
  • Oxtail is hot immediately after cooking - eat with caution.
