Things You'll Need:
- 2 tsp fine ground Greek Coffee Grounds
- 2 tsp Sugar
- A small pot (briki)
- ½ cup of cold Water
- 2 demitasse or espresso cups (or small tea cups)

Step 1
BrikiIn the small pot (called a Briki), add the cold water, the ground coffee and the sugar. It is important that you start with a cold pot and cold water, as it will take longer to boil, so you will get better flavor extraction from the Greek gourmet coffee.

Step 2
Turn the heat to medium. If it boils too fast it could burn. Stir the coffee until it starts to foam. Once it starts to foam, cease stirring.

Step 3
Turn the Greek gourmet coffee off as soon as it comes to a hard boil. Immediately pour the coffee into the cups. If you don’t do it immediately, the grounds will start to settle. Then when you pour it, one person will get all the grounds.

Step 4
Let the coffee cool in the cups. Don’t touch it for a minute so that the grounds will settle to the bottom. Try not to stir it too much when you drink it or you will end up drinking the grounds.

on 2/16/2008 I also add crushed cardamom seeds into the coffee just before it comes to the boil. It gives it a rich aroma that compliments the coffee.
