This is a quick and delicious meal in one. Juicy and very flavorful. You will be glad you chose to cook at home with this no fuss recipe of Stuffed Bell Peppers.

Instructions

Things You'll Need:

  • 4 bell peppers, any variety, hulled
  • beef or vegatable stock
  • 2 cups rice
  • 1 lb. ground beef
  • 1 small sweet onion (diced)
  • 26 oz. spaghetti sauce
  • 2 oz. spaghetti sauce (or less, this is used separately)
  • salt & pepper to taste
  1. Step 1

    Cook the rice as instructed by bag/box and instead of using water try a beef or vegatable stock-use the same amount of stock as you would water. While the rice cooks, saute the onion.

  2. Step 2

    Add the ground beef to the onion when the onion is almost clear in color.

  3. Step 3

    In a medium-sized bowl combine the beef, onion, and spaghetti sauce; fold the rice into the mixture last. Add salt and pepper to taste.

  4. Step 4

    Spoon the mixture into the bell peppers until they are full. Cover the peppers with 2 oz. spaghetti sauce, or less depending on what you like.

    Place stuffed bell peppers in microwave safe dish and cover with plastic wrap. Microwave on high for 12-16 minutes or until the bell peppers have reached the desired level of softness. Serves 4.

Tips & Warnings
  • Hull out the bell peppers in the same fashion that you would use on a pumpkin.
  • store the bell peppers in the freezer. This will cut the cooking time in half to about 2 minutes each. The shorter time will help preserve the nutrients. Poke at the bottom before stuffing so that excess juices may flow out into the dish.
  • Instead of spaghetti sauce try: ketchup, BBQ sauce, sloppy joe sauce, tomato sauce.
  • Instead of beef you could use firm crumbled tofu or ground turkey.
  • You must cover your dish while cooking in the microwave. If you do not cover your dish then the sauce on your peppers will dry out and become overcooked and crunchy.
