How to Make Crock Pot Taco Soup

I've been using this recipe for a year or so now. Taco Soup is great for potlucks or any kind of social gathering. Great football game food. Once I bring it somewhere, those same people usually request it again and again. It couldn't be easier to make.

Difficulty: Easy
Instructions

Things You'll Need:

  • 3 quart (or larger) crock pot
  • 1 lb ground beef
  • 28 oz can of diced tomatoes
  • 15 oz can of corn
  • 15 oz can of black beans
  • 15 oz can of kidney beans
  • 1 pkg ranch dressing mix
  • 1 pkg taco seasoning
  • 1 small onion
  1. Step 1

Brown the ground beef in a skillet and drain the grease. I find that keeping the meat chunks bigger makes for more enjoyable taco soup.

  2. Step 2

Dice the onion and add all ingredients into the crock pot. Depending on how much broth you would like, you may choose to drain the canned items or add the liquid to the mixture.

  3. Step 3

Put the lid on the crock pot and cook on low for 4 to 6 hours. That's it! Yields about 3 quarts.

Tips & Warnings
  • Be sure to get some tasty corn chips for scooping the taco soup.
  • Also, most people prefer shredded cheddar cheese as a topping.
  • This isn't the kindest of foods to the intestinal functions; eat at your own risk.
