How to Make Pecan Pie Muffins

If you look forward to pecan pie during the holidays, I think this recipe will become a favorite.

Instructions

Things You'll Need:

  • One cup pecans
  • One cup firm packed brown sugar
  • 1/2 cup all purpose flour
  • 2 large eggs
  • 1/2 cup of butter or margarine
  1. Step 1

    Preheat oven at 350 degrees.

  2. Step 2

    Dump a cup of firm packed brown sugar into a large bowl. Mash or break up the packed sugar with a fork.

  3. Step 3

    Roughly chop up a cup of pecans, or use packaged pre-chopped pecans and add to the bowl.

  4. Step 4
     

    Measure out ½ cup of all purpose flour and add to the bowl. Mix up the dry ingredients with a fork.

  5. Step 5
     

    Pop a stick of butter into the microwave in a microwave-safe bowl for about 40 seconds or until melted.

  6. Step 6

    Break a couple of eggs into the butter and beat by hand until frothy.

  7. Step 7

    Add eggs and butter to dry ingredients and mix until just combined. You don’t want to mix too long.

  8. Step 8
     

    Line a muffin pan with foil cupcake liners. You’ll need them with this recipe because these things stick in even the best non-stick pan. Spoon muffin batter into the foil liners. Be careful not to overfill.

  9. Step 9
     

    Cook at 350 degrees for 20 to 25 minutes. Remove and allow to cool before serving to family.
