Celiac disease doesn't mean you have to do without that delicious stack of pancakes on Sunday morning!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 C Rice, Millet, or Chickpea flour
  • 1/2 C Soy flour
  • 1/2 C cornmeal
  • 1 TBL non-aluminum baking powder
  • 1/4 tsp seasalt
  • 1 egg, beaten
  • 1.5 C water
  • 1 tsp vanilla
  • 2 TBL olive oil, not virgin
  • Electric or stove top griddle
  1. Step 1

    Have all your ingredients ready, then preheat your griddle.

  2. Step 2

    Sift all dry ingredients into a large bowl.

  3. Step 3
     

    Measure and mix all your wet ingredients in a 2 Cup or larger measuring cup. If you don't have one, just mix them a separate bowl.

  4. Step 4

    Pour out 1/2 to 3/4 cup batter onto pre-heated griddle (350 F. to 375 F.). Bake until golden, turning only once. Enjoy!

Tips & Warnings
  • Makes about 12 pancakes.
  • For variety, add blueberries, fresh or frozen; mashed ripe banana; chopped nuts
