Things You'll Need:
- 1 C Rice, Millet, or Chickpea flour
- 1/2 C Soy flour
- 1/2 C cornmeal
- 1 TBL non-aluminum baking powder
- 1/4 tsp seasalt
- 1 egg, beaten
- 1.5 C water
- 1 tsp vanilla
- 2 TBL olive oil, not virgin
- Electric or stove top griddle

Step 1
Have all your ingredients ready, then preheat your griddle.

Sift all dry ingredients into a large bowl.

Measure and mix all your wet ingredients in a 2 Cup or larger measuring cup. If you don't have one, just mix them a separate bowl.

Pour out 1/2 to 3/4 cup batter onto pre-heated griddle (350 F. to 375 F.). Bake until golden, turning only once. Enjoy!
