How to Make Matzo Brei (Fried Matzo)

The Jewish Passover Festival requires that we eat Matzo during the holiday and we do not eat bread. This is to celebrate Moses and the Hebrews crossing the desert when running from the Egyptians. Matzo is quite tasteless and quite honestly, a real downside to the holiday. However, fried matzo or matzo brie is the ONE good thing you can do with Matzo.

Instructions

Things You'll Need:

  • Heady skillet
  • 3 sheets of plain matzo
  • Canola Oil
  • 3 eggs
  • Kosher salt
  • Garlic power/Onion Powder
  • Chopped Parsley
  • Apple Sauce
  1. Step 1

    Crumble 3 sheets of Matzo in a large bowl.
    Add Water to cover
    Soak for 5 minutes
    Drain water

  2. Step 2

    Mix 3 eggs with drained Matzo
    Add ½ teaspoon salt and ¼ teaspoon pepper
    Add garlic and onion powder to taste
    Add in 3 Tablespoons of chopped parsley
    Stir with fork until mixture is a uniform consistency

  3. Step 3

    Heat ¼ cup of canola oil in heavy skillet (cast iron is best)
    Pour mixture into skillet when oil is hot and smooth the mixture
    After 5 minutes, reduce the heat to medium low and cover
    Cook for 20 minute
    Turn pancake carefully
    Increase heat slightly and cook uncovered for 15 minutes, turn up heat slightly

  4. Step 4
    Ready to eat!

    Sprinkle with ½ teaspoon kosher salt and serve with apple sauce

Tips & Warnings
  • The longer you cook it covered, the softer the exterior will be
  • Make sure oil is hot before adding the mixture
  • Cooking with hot oil can cause the oil to splatter. To reduce splatter, turn down the heat slightly
