This is a yummy natural salad dressing using ingredients you might find exotic, or not depending on how adventurous a cook you are.

Instructions

Things You'll Need:

  • 1/3 lb soft organic tofu
  • 1 ripe avocado, pitted and peeled
  • ½ C water
  • ¼ C extra virgin olive oil
  • ¼ C light miso
  • 2 TBL brown rice vinegar
  • 1 TBL lemon juice
  • ½ small red onion, minced
  • 1 small clove garlic, minced
  • ¼ C fresh basil, minced
  • Blender
  • 2 C water
  1. Step 1

    Bring the 2 cups of water to a simmer; add the tofu and simmer for 2 minutes. Remove tofu from water, cool to room temperature by placing in cold water, then remove from water again.

  2. Step 2

    Place all ingredients, EXCEPT the basil, in a blender and puree

  3. Step 3

    Pour pureed ingredients into a bowl.

  4. Step 4

    Stir in basil.

  5. Step 5

    Use immediately or refrigerate until serving.

Tips & Warnings
  • This recipe will make enough dressing for 4-6 servings, so it is best to make this for a special occasion, not as dressing for the week. It won’t keep well.
