How to Make a Basil Avocado Salad Dressing
If you're tired of the standard bottled ranch and Italian dressings, try something a little more natural and exotic. This basil and avocado dressing has some familiar ingredients, but you probably haven't tasted them in quite this way before. This recipe makes four to six servings and doesn't keep well, so plan to use it all during a special meal. Does this Spark an idea?
Things You'll Need
- Saucepan
- 1/3 pound soft organic tofu
- 2 cups water
- Blender
- 1 ripe avocado, pitted and peeled
- 1/2 cup water
- 1/4 cup extra virgin olive oil
- 1/4 cup light miso
- 2 tablespoons brown rice vinegar
- 1 tablespoon lemon juice
- 1/2 small red onion, minced
- 1 small clove garlic, minced
- 1/4 cup fresh basil, minced

Bring 2 cups of water to a simmer, add the tofu and simmer 2 more minutes. Remove the tofu from the water, cool it to room temperature by placing it in cold water and then remove from the cooling bath.

Puree the tofu, avocado, 1/2 cup water, extra virgin olive oil, light miso, brown rice vinegar, lemon juice, red onion and garlic in a blender.

Pour the pureed ingredients into a bowl and stir in the basil.

Use immediately or refrigerate until you are ready to serve.

Tips & Warnings
This recipe will make enough dressing for 4-6 servings, so it is best to make this for a special occasion, not as dressing for the week. It won't keep well.
