One of the benefits of attending the weekly meetings for Weight Watchers is that you will get many tips. This can be about exercise or attitude or food. This is one recipe that was given to our group from a member that goes to Florida for the winter(Colorado weather gets to her). She got it at one of the meetings there. This was so insanely easy and sounded disgusting at first. But she actually made some of these brownies and brought them to a meeting for us to try. Wonderful. This recipe makes about 36. and they are only 1/2 point apiece.

Difficulty: Easy
Instructions

Things You'll Need:

  • Betty Crocker Brownie mix
  • 1 16 oz. can black beans
  • 1"(small) cupcake pan
  1. Step 1

Pour the black beans (do not drain) into a food processor or blender. Puree.

  2. Step 2

Add the Brownie mix. Mix until smooth.

  3. Step 3

Using a small melon scoop, put batter into the small cupcake pan. You may use the papers if you want. If not using the cupcake papers, spray the pan with cooking spray.

  4. Step 4

Follow the box directions for temperature and cupcake time. Yields about 36 cupcakes.

Tips & Warnings
  • The idea is not to tell the husband and children what these are made of until after they have tried them and raved at how moist and delicious they are.
  • The member who gave us the recipe said the Betty Crocker Brownie mix bought at Walmart seems to have a different sugar content supposedly. I tried a box bought at Safeway and it was just as good.
  • So go ahead and have two for a snack and you count the 1 point on the Flex plan and 1 point on the weekly allowance on the Core plan.
  • Don't expect people to believe you used black beans in these brownies so don't tell them until they try them.
