Things You’ll Need:

  • a Double boiler
  • A stove
  • good reliable metal-stemd thermometer
  • Clean Gallon milk jugs
  • A Clean wooden spoon

Step1
doubble boiler Prepare The double boiler by placing the milk in the top and water in the bottom of the double boiler.
Step2
Put the metal-stemd thermometer and spoon in the milk and keep them there
the whole time
Step3
Heat the milk, while stirring constantly, to 169 degrees F and hold it at that temperature for no less than 30 seconds. Keep stirring you want to make sure all the milk is heated evenly or this will not work !!!
Step4
After 30 seconds take The pot containing the milk and place it into a pan of water and stir vigorously to ensure quick and even cooling
Step5
When the milk temperature is below 127 degrees F, replace the cooling water with ice water and continue to cool the milk, Stirling once every 30 seconds until the milk reaches 39 F or below
Step6
Pour the milk into the CLEAN gallon milk jugs and store in the fridge at 39 F or below .
