How to cook a quick, healthy, frugal company dinner

Do you enjoy having company over? Do you stress out because a.) you don't have extra money b.) you can't cook c.) you don't have much time after a hard days work? Don't stress. Try this quick, healthy, frugal meal and have fun!

Instructions

Difficulty: Easy

Things You’ll Need:

  • Italian reduced fat dressing
  • 1 lb. boneless chicken breasts cut into strips
  • 2 cps instant brown rice uncooked
  • 1 green pepper, cut into strips
  • 1 1/;2 cups chopped tomatoes
  • 1 cp 2% Cheddar Cheese
  • 1/2 cp sliced green onions
  • 1 1/4 cps fat free chicken broth
Step1
Heat dressing in large nonstick skillet on medium-high heat. Add chicken; cook and stir 2 min.
Step2
Stir in rice, broth and peppers. Bring to boil; cover.
Step3
Simmer 5 min. or until chicken is cooked through and rice is tender.
Step4
Let stand,covered, 5 min. or until liquid is absorbed.
Step5
Add tomatoes, cheese and onions; stir until blended

Tips & Warnings

  • Makes 4 servings. 1 1/2 cps each
  • Add dessert and you have a lovely company dinner!
