How to Make Scrumpy Cider

Things You'll Need
- 8 lbs. of apples
- 2 gal. of water
- 1 oz. root ginger
- Juice of 4 lemons
- Empty resealable bottles
- Plastic knives

Cup the unpeeled apples into small pieces.

Place the apples in a pot of boiling water. Be sure that the water covers all of the apples.

Put the mixture aside for 2 weeks. Return to the mixture every so often to crush the apples. Watch out for mold.

Drain the liquid into a bowl and mix in the ginger root, lemon juice and sugar.

Stir the mixture until the sugar dissolves.

Add 1/2 cup of boiling water to the mixture. Place the mixture aside again for another 2 weeks. During that period, check the mixture every night and remove any scum that forms at the top.

Pour the mixture into the bottles and seal the tops tightly. The tops should be sealed to the point where you can still unscrew them. Set the bottles aside for 2 days.

Completely tighten the tops. Put them in a cool, dark and dry place for the next 2 months.

Enjoy with friends or for a special occasion at the end of the 2 months or later.

Why does it warn not to use any metal in this recipe? How are you suppose to boil the water? I will try this, but i've got to use a metal pot to boil the water. -
