How to Make Apricot Waffles

Waffles are the perfect breakfast food, but if you're looking to spice them up, try making apricot waffles. Your guests won't soon forget the unique taste that apricots bring to the waffles and they will probably beg for the recipe so they can recreate the breakfast for themselves.

Instructions

Things You'll Need:

  • Blender
  • Three mixing bowls
  • Waffle iron
  • 15-1/4 oz. can of California apricot halves
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/4 teaspoon baking soda
  • 1-1/2 teaspoons baking powder
  • Three tablespoons sugar
  • 1/2 teaspoon salt
  • 1 egg yolk
  • 1-3/4 cups buttermilk
  • 2 tablespoons of melted butter
  • 3 egg whites
  • 1 cup low-fat vanilla yogurt
  • 1/3 cup maple syrup
  1. Step 1

    Drain all of the liquid from your can of apricots.

  2. Step 2

    Puree three apricot halves in a blender until the concoction is smooth. This should yield a 1/4 cup.

  3. Step 3

    Chop the rest of the apricots, making about 8 to 10 tablespoons. Put this aside for now.

  4. Step 4

    Get a medium-sized bowl. Mix one cup of all purpose flour and one cup of whole wheat flour and then add 1-1/2 teaspoons of baking soda, 3 tablespoons of sugar and half a teaspoon of salt. Put the mixture aside.

  5. Step 5

    Mix 1 egg yolk, 1-3/4 cups of buttermilk, 2 tablespoons of melted butter and your 1/4 cup of apricot puree from Step 2.

  6. Step 6

    Pour your milk, butter and apricot puree mixture into your flour mixture. Blend it all together until all the lumps are gone.

  7. Step 7

    Beat the egg whites and fold them into the waffle batter you've made. Then you can fold in the chopped apricots from Step 3.

  8. Step 8

    Pour your batter into a waffle iron to cook.

Tips & Warnings
  • You can garnish your waffles with vanilla yogurt, maple syrup, powdered sugar or more chopped apricots. Apricot waffles are also good served with an assortment of fresh fruit.
  • This recipe makes about eight low-fat waffles.
