How to Make Grilled Vegetable Salad

The grill not only makes meat taste better but can add an original flavor to vegetables as well. A grilled vegetable salad is a great alternative to a plain green salad and a great appetizer for grilled hamburgers, steaks or pork chops.

Instructions

Things You'll Need:

  • Olive oil
  • Balsamic vinegar
  • Garlic
  • Oregano
  • Basil
  • Salt
  • Pepper
  • Cast iron bowl
  • Vegetables
  • Leafy greens
  • Parmesan cheese
  1. Step 1

    Mix the salad together in a medium-sized mixing bowl.

  2. Step 2

    Put 4 tbsp. of olive oil and 3 tbsp. of balsamic vinegar in the bowl. Press 2 cloves of garlic and add the juice to the mixture. Season with oregano, basil, salt and pepper.

  3. Step 3

    Add vegetables to the mixture. Add any vegetables you like. Green, yellow and red peppers, eggplant, zucchini, yellow squash and onions all grill nicely. Toss the vegetables until they are well coated with the liquid.

  4. Step 4

    Place a cast iron bowl onto the grill. Turn up the grill to high heat and get the bowl hot. Place the vegetables in the bowl and grill them until they become tender. Be sure to stir the vegetables occasionally so they cook evenly.

  5. Step 5

    Toss leafy greens in the liquid mixture to coat them. Consider using romaine lettuce, endive, spinach and arugula. Top the greens with the grilled vegetables.

  6. Step 6

    Shred some Parmesan cheese. Sprinkle the cheese over the top of the grilled vegetable salad. Add additional salt, pepper, oregano and basil to taste.

Tips & Warnings
  • Add some grilled chicken breast to the grilled vegetable salad to turn the salad from an appetizer into a main course.
  • Pour olive oil into the cast iron bowl if the vegetables are browning before they become tender.
