How to Make Curried Chicken Salad

Everyone loves chicken salad but sometimes regular mayonnaise can get a little boring. Try this twist on an old favorite: curried chicken salad. By following the steps below anyone can make curried chicken salad. All one needs is a little cooking know-how and a few simple ingredients.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 1/2 pounds of cooked and cooled skinless boneless chicken (white or dark meat)
  • 1/2 cup of Dijon mustard
  • 1 cup of plain yogurt
  • 1 1/2 tablespoons of curry powder
  • 1/2 teaspoon of cayenne pepper or more to taste
  • 1/2 tablespoon of ground cumin
  • 1/2 cup or raisins
  • Ground black pepper to taste
  • Kosher salt to taste
  • 1/2 cup of cashews
  • Bread for sandwiches or lettuce for salad

Step1
Cook and cool boneless, skinless chicken. This can be either white or dark meat, according to taste. Cut the white or dark meat chicken into small cubes. Set aside.
Step2
Combine the Dijon mustard, plain yogurt, curry powder, cayenne pepper and cumin in a large mixing bowl. Make sure these ingredients are thoroughly mixed together.
Step3
Add the cubed chicken to the curry mixture. Add the raisins to the chicken and curry mixture.
Step4
Season this chicken, curry and raisin concoction with ground black pepper and kosher salt. Add more cayenne pepper to preferred taste.
Step5
Put in the cashew nuts just before serving the curried chicken salad so they stay crunchy.
Step6
Serve the curried chicken salad. Try serving in on bread as a sandwich or on lettuce as a salad.
