Pulled pork makes a great football party treat or after-Thanksgiving spread when everyone is tired of turkey. Cuban-style pulled pork relies heavily on spices -- garlic in particular -- to give the pork a zesty, hearty flavor. Does this Spark an idea?

Things You'll Need

  • 8- to 10-pound pork shoulder
  • 3 heads of garlic
  • 3 tablespoons sea salt
  • 2 tablespoons dried oregano
  • 1/2 teaspoon cloves
  • 1 teaspoon allspice
  • 2 tablespoons cumin
  • 3 or 4 bay leaves
  • 3 or 4 red dried chili peppers
  • Dry marinade
  • 1 tablespoon black peppercorn
  • Cast-iron roasting pot with cover
  • Knife
  • Electric spice grinder

Instructions

      Peel the garlic heads.

      Stab little slits all over the pork with a sharp knife and stuff in the garlic cloves with your fingers.

      Grind the allspice, cloves, peppercorns and cumin in an electric spice grinder.

      Combine the salt, ground spices and oregano. Rub dry marinade over the pork shoulder.

      Place the red chili peppers and bay leaves in the bottom of the roasting pan.

      Place the pork shoulder in pan, skin-side down.

      Cover and cook on low heat for about six to eight hours, or until fork-tender.

      Shred the pork with forks and serve on crusty rolls slathered with mayonnaise and good mustard.

Tips & Warnings

  • You also can roast the pork at 325 degrees or use a crock pot.
