When was the last time you drove past a street vendor selling Cuban pulled-pork sandwiches? Probably not recently unless you live in southern Florida or Cuba! Here is a way to cook pork in your own house with just a few simple ingredients. It is enough for a great football party or maybe an after Thanksgiving spread when everyone is tired of turkey. My favorite is for Christmas day when relatives are stopping in at various times and I can serve this pork warm or at room temperature. The leftovers are even better the next day!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 8-10 pound pork shoulder
  • 3 heads of garlic
  • 3 tbl. sea salt
  • 2 tbl. dried oregano
  • 1/2 tsp. cloves
  • 1 tsp. allspice
  • 2 tbl. cumin
  • 3 - 4 bay leaves
  • 3-4 red dried chili peppers
  • 1 tbl. black peppercorns
  • cast iron roasting pot with cover

Step1
First peel your garlic. Yes, all three heads of it!
Step2
Stab little slits all over the pork with a sharp knife and stuff in the garlic cloves with your fingers.
Step3
In an electric spice grinder, grind allspice, cloves, peppercorns and cumin.
Step4
Combine salt, ground spices and oregano. Rub dry marinade over pork shoulder.
Step5
Place red chili peppers and bay leaves in bottom of roasting pan.
Step6
Place pork shoulder in pan, skin side down.
Step7
Cover and cook on low heat for about 6 – 8 hours or until fork tender.

With two forks, shred the pork apart and serve on crusty rolls slathered with mayonnaise and good mustard. Delicious!

Tips & Warnings

  • I used a cast iron pot for this (#12) but of course this could be done in any heavy pot.
  • If you choose to use an oven, roast it at 325 degrees.
  • A crock pot would work just fine for this.
