Things You'll Need:
- 3 eggs, room temperature
- Spinach, about 2 cups
- Onion
- Bell pepper
- Shredded sharp cheddar cheese
- 3 slices of bacon
- 1 small tomato
- Salt and pepper
- Olive oil
- Sharp knife
- Small nonstick pan
- Small whisk
- Nylon spatula
- Cutting board

Step 1
Ready to cook!You will only be using one egg yoke and three egg whites so the first thing you need to do is separate two of the yokes from the eggs. You can use a tool for this step or just crack the egg open and use your hand to "catch" the yoke and let the white go into the bowl. (removing the two egg yokes you will cut the fat from the omelet and the taste will not be effected)
Beat your eggs until they are nice and frothy, set aside. Slice your bell pepper in half, remove the seeds, slice some strips of bell pepper, dice the strips, put the diced bell pepper in a bowl.
Dice the onion, use as much or little as you want. Put the diced onion into the bowl with the bell pepper, set aside.
Core the tomato and remove the seeds by gently squeezing the tomato (do this over a sink or have a bowl below the tomato to catch the seeds and juice. Dice the tomato, place the tomato in its own bowl and set aside.
Slice the bacon into small pieces, place in a bowl and set aside. Place a small amount of cheese into a a bowl and set aside. Get your spinach ready by placing it in a bowl. The picture below shows you what you should have at this point (notice that everything is right by the stove): -
Step 2
Finished fillingNow we are going to start the cooking process, first we are going to get our filling ready.
Turn on a burner to medium heat, place the pan on the burner and lightly spray with olive oil.
Add the diced bell peppers and onions to the pan. Saute until the onion softs up, about 3 to five minutes.
Add the bacon pieces to the pan, saute until the bacon is cooked.
Add the spinach. Make sure you use a pretty good amount of spinach as it will cook down to almost nothing, this process takes about 3 minutes or so.
Place your filling into a bowl and set aside. -
Step 3
Cooking eggLower the heat to medium low, spray a bit more oil into the pan, give your eggs another quick whisk and pour them into the pan. Using your nylon spatula stir the eggs so that the uncooked egg is able to flow to the bottom of the pan. You are NOT scrambling the egg, just keep the spatula moving.
As the egg cooks there will be less and less uncooked egg to move to the bottom, use the spatula to gently scrap the pan and continue to push the uncooked egg to the bottom, this process takes just a few minutes. -
Step 4
Folding omeletNow you are ready to add your fillings. First add the cheese, then add the bowl with the bacon, onion, bell pepper and spinach. Add your diced tomato on top. Add salt and pepper to taste. let this cook for a minute or so, until you see that the cheese is melting.
Now you are ready to fold your omelet. Take the spatula and go under the cooked egg to make sure the egg isn't sticking to the bottom of the pan.
Get the spatula all the way under the half that does not have any filling and gently fold it over the filling. -
Step 5
Sliding omelet on to the plateOk, we are almost done. Now we need to slide the omelet out of the pan and on to a plate. Again, loosen the omelet by using your spatula. When you are sure that the omelet is not sticking, remove the pan from the heat and place OVER a plate.
Now GENTLY slide the omelet onto the pan, use your spatula to help. -
