This is a super easy recipe for soy sauce chicken. It can be served hot, cold or room temperature and is excellent as leftovers. One of the great things about this soy sauce chicken is that it requires very little of your attention to make -- about 10 minutes of prep, 10 minutes of cooking and then it's left alone for 1 hr before it's ready.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 cup of water
  • 2 star of anise
  • 1 piece of fresh ginger (about 3/4")
  • 1 cup of soy sauce
  • 1 T sherry
  • 1 cup of brown sugar
  • 3-1/2 chicken breasts
  • sliced green onions (for garnish)

Step1
In a pan with a tight fitting lid bring the water to a boil. Add all ingredients except chicken and green onions. Bring back to a boil.
Step2
Add chicken and after brining back to a boil, lower to a simmer. Cover and cook for 5 minutes.
Step3
After 5 minutes flip chicken and cook for 5 more minutes. Then turn off heat (or remove from heat) and let stand -- covered -- for 1 hour. DO NOT OPEN LID.
Step4
Remove chicken, chop and serve with sauce and sliced green onions and white rice.

Tips & Warnings

  • You can substitute spare ribs or other chicken parts.
