How to Make Campfire Eggs

No matter how wonderful the scenery, meals around the campfire are often the highlight of the camper's day. Modern camp stoves and specialized cookware make the cook's job easier, but nothing beats the taste and appeal of a meal cooked over the campfire. Try this easy-to-cook breakfast recipe you and your family can enjoy around the campfire.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 8 slices of bacon
  • 1 1/2 cups frozen hash browns
  • 1 sweet onion
  • 6 eggs
  • 1/3 cup of milk
  • 1/2 cup shredded Cheddar or Colby cheese
  • Salt and pepper to taste
  • Cast iron skillet
  • Campfire grate
  • Campfire

Step1
Start by building a campfire using very dry wood. Let the fire burn down until the wood turns to red coals, then stir the coals. The goal is to have a clean burning, very hot campfire. Place the grate across the fire about 6" above the coals by placing rocks on either side of the fire to support the grate.
Step2
Place cast iron skillet on the grate and cook bacon in skillet until crisp. Remove and crumble bacon.
Step3
Pour off all but 2 tablespoons of the bacon fat.
Step4
Slice as much onion as you like but slice it very thin. Add onion to the skillet with the potatoes, then sprinkle with salt and pepper.
Step5
Return to fire, and fry until potatoes are lightly browned.
Step6
Beat together eggs, milk, 1/4 teaspoon of salt and pepper. Pour over browned potatoes in skillet.
Step7
Cook without stirring until mixture begins to set.
Step8
Using a spatula lift and fold partially cooked eggs so uncooked egg flows underneath.
Step9
Continue cooking for about 4 minutes until cooked but not dry.
Step10
Arrange crumbled bacon on top, sprinkle with cheese, and serve immediately.

Tips & Warnings

  • Make sure the campfire consists of red coals before cooking. This will ensure consistent heat. Burn down more dry wood to coals if you find you don't have enough heat.
  • If you cannot make a campfire, use a camp grill with a high output burner. This will ensure the cast iron skillet is evenly and completed heated before cooking.
