How to make authentic Japanese Miso Soup

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • about 30 half inch cubes tofu
  • 4 mushrooms - sliced
  • 2 stalks green onions - chopped
  • 4 cups water
  • 2 tsp dashi (nomoto)
  • 3 to 4 tbs miso paste (adjust to taste)
Step1
Boil 4 cups of water and dashi.
Step2
Add tofu and mushrooms, simmer gently about 3 minutes.
Step3
Add miso and dissolve completely.
Step4
Immediately turn off the heat and add chopped green onions.
Step5
Serve hot.

Tips & Warnings

  • Miso paste usually comes in a container and can range in various color from dark brown to red
  • You can use Korean or Japanese brand miso paste - they vary in slightly in flvaor but taste good either way
  • Paste can be purchased at any Asian grocery store
  • Store paste in refrigerator after opening
  • Buy dashi powder to enhance your miso soup - dashi is flavor derives from kelp seaweed or bonito flakes/anchovies
  • If pork is added to miso soup, it is called butajiru (or tonjiru), meaning "pork soup."
  • If prefer, you can sprinkle seaweed over your miso soup
  • Do not use the entire packet of dashi powder - it is very salty so use a little, adjust to your taste
