Sample a veal dish. Italy is well known for its flavorful veal cuisine. They range from Veal Francaise, a lightly breaded cutlet with lemon and butter sauce, to Veal Parmesan, the well-known veal dish topped with red sauce and cheese, to Veal Florentine, a veal cutlet topped with sautéed spinach and cheese.

Taste a white truffle. White truffles are the favorite delicacy of Italy's Piedmont region. This prized tuber that grows at the base of oak trees fills the markets of Alba and Turin in October and November. The local chefs use it in a variety of dishes, such as shaved over pasta or inserted under the skin of roast chicken or duck.

Try a hearty vegetable stew. Central Italy, especially the provinces of Tuscany and Umbria, are noted for their robust, peasant-style dishes. Most Tuscan cooks have their own hearty stew recipe and most are delicious. Common ingredients are beans, tomatoes and spinach. Grab a loaf of crusty bread to complete the meal.

Savor spaghetti and meatballs. Naples, Sicily and the rest of southern Italy are home to many of the dishes that Americans most associate with Italian cooking. This is the home of the red sauce, eggplant parmesan, and spaghetti and meatballs. Naples is also home to pizza, although the Italian version is a thin-crusted (yet tasty) pie with raw ingredients that bears little resemblance to the American pizza.
