Difficulty: Moderately Easy
Things You’ll Need:
- Eggs
- Frying Pan
- Milk
- Beater
- Wine
- Cheese (I prefer Dubliner or sharp Cheddar)
- Sun-dried tomatoes
- 2 whole Mushrooms, sliced
- Quarter of an onion
- Fresh spinach
- Dry basil, salt, and pepper
- Hungry people who want omelettes helps, too
Step1
First off, you want to saute the ingredients together. Start Cut up about a quarter of an onion (either in strips or diced, whichever you prefer) You'll want to add a little olive oil to the pan before you throw it in. Saute until the onions start to brown.
Step2
Next, add some cooking wine or, as I always use, a bit of "Two Buck Chuck" ($1.99 at Trader Joe's - I keep my kitchen stocked). Add enough to saute the mushrooms in. Add a pinch basil here, too. Saute until the mushrooms have soaked up most of the wine. Add your fresh spinach and sundried tomatoes (you can subsitute other ingredients here if you like, you don't have to be all fancy like me but I really don't see why you wouldn't want to be). Saute these together until the spinach starts to dry up and the wine evaporates. You can always add more wine if you don't think its been long enough. Put these ingredients aside.
Step3
Beat two eggs with about 1/4 cup of milk. Add another pinch of basil and some salt and pepper into the mixture as well. Set your burner on medium to medium high and pour the mixture into a frying pan sprayed with cooking spray. Place a couple slices of cheese to cover half of the omelette.
Step4
When the omelette starts to fluff up a bit and solidify a bit, you'll want to add your ingredients on top of the cheese. Next, using a spatula, gently flip one side of the omelette to cover the other half. Flip omelette over and cook for about two minutes (or until eggs are cooked).
Step5
Slide the finished product onto a plate. Serve with bacon or sausage or by itself! Enjoy!

on 10/21/2007 jOANNA dUFF! You are one ambitious young woman! Yes, this is the "Supreme", hands down, Crazy Good Omelete... I just had breakfast with "Kiss Flannigan" (noted practioner of only eating out, all meals) and we really really would like to thank you for the omelete recipe! But E.how can you possibly do that on an any morning of the week but Sunday, maybe... LOL? It took me an hour to just do the "Saute." I'm not as cool as you obviously are, in the kitchen! I do know that your last Tips and Warning thingy is right after spending an hour and a half making breakfast for "Kiss" and messin' it up... well, it would be Transformed into the Scambled eggs quicker than anything else I did today! Very Cool, Very interesting "Kiss" is eating still (Can't still be that Omelete could it?) Thanx, Bailey
