Preheat oven to 300 degrees. Cut open pumpkin and use a strong metal spoon to scoop out the inside. Remove the stringy pulp from seeds using your fingers. Place seeds in a strainer and rinse to remove remaining pulp.

Toss seeds with 2 teaspoons melted butter and salt. Spread seeds evenly into one layer on a baking sheet.

  3. Step 3

Place seeds in oven and roast slowly. Be sure to turn seeds occasionally. Roast until crisp and golden!

Tips & Warnings
  • Some folks swear the seeds are better if you soak them in salt water overnight before roasting!
  • Say no to rinsing! Some gurus claim it rinses away natural taste!
  • Try olive oil instead of butter to "up" the health benefits of the seeds!
  • Some spices to liven things up? Try garlic, cumin, cayenne pepper, seasoned salts, cracked black pepper, or your favorite dry seasoning!
  • Use fresh pumpkin instead of canned for all your recipes and then you'll have plenty of seeds to roast! (And your recipes will taste better)!
  • Don't rush the roasting! Lower oven temperatures with longer roasting time works best!
  • Don't over roast! Light golden-brown color produces the best crispy seeds!
  • Beware the salt! Better to add too little in the beginning the salt when the seeds are finished!
