Things You'll Need:
- Potatoes
- Oil
- Large Frying Pan
- Salt

Step 1
Fill large bowl with ice and water.

Fill frying pan with approximately 3" of oil and heat over medium temperature.

Wash and peel potatoes (if desired) and cut into uniform french fry sections and place in ice water.

After all potatoes are cut, allow them to remain in ice water for 20 minutes (or longer if needed).

5 minutes prior to cooking, make sure frying pan heat is turned to high. Drain potatoes and pat dry with paper towels.

Carefully add potatoes to fill pan and cook for approximately 6-8 minutes or until fries are limp soft, remove from pan by placing on paper towels to absorb excess oil. Continue cooking remainder of potatoes.

When all potatoes are par-cooked you have 2 options...let sit at room temperature for 1 hour or refrigerate up to 4 hours (great option if planning to pre-cook for a later meal).

When you are ready to eat, re-heat oil over high heat and once oil is hot, add previously par-cooked potatoes to finish cooking. Only add enough potatoes to cover bottom of pan. When potato float to the top and are golden brown and crispy (approximately 5 minutes) remove from the oil by draining on paper towels and lightly salt. Repeat steps until all fries are cooked.

on 9/6/2009 I really enjoyed the results of this recipe. You don't need 3" of oil; you can use less than 1", but use a deep pot to prevent spattering on the stove, and you have to take turns with fry batches. For crispy fries, fry for less time -- around 5-6 min.
