How to Make Delicious Fried Rice

Here is a relatively easy recipe for my mother's fried rice. Hope you enjoy.

Instructions

Things You'll Need:

  • 3 cups of cooked rice,
  • ake mushrooms, Chinese sausage, your choice of meat, 1 cup of frozen peas and carrots, 4 eggs, oyster sauce, soy sauce, sugar, vegetable oil, frying pan
  1. Step 1

    We Asians don't like wasting food and one way of salvaging leftover rice is by making fried rice. Of course, many of you may not have leftover rice to cook with but that's not a problem. Making rice is easy!

    Pour two cups of rice (that has already been rinsed of excess starch) into a pot. Pour just enough water to cover the rice by about half an inch. Cook on low heat for about 20-30 minutes.

  2. Step 2

    While the rice is cooking, soak about half a cup of ****ake mushrooms in some water. ****ake mushrooms add great flavor to fried rice and have a nice chewy texture.

    After the mushrooms have moistened up, cut the tops of the mushrooms into thin strips.

  3. Step 3

    Everyone knows how to make an omelet so I hope steps for cooking eggs aren't necessary here. After the omelt has been cooked, cut it into thin 1/2 inch thin strips. (3 eggs)

  4. Step 4

    In a separate bowl, mix three to four tablespoons of oyster sauce, a teaspoon of soy sauce, and a tablespoon of sugar. You may add minced garlic if you like.

  5. Step 5

    Cut up one sausage into small 1/2 inch pieces.

  6. Step 6

    Grease your pan with about 2 tablespoons of oil and cook the suasage pieces until brown, pour in the rice and break the rice apart until it is evenly coated with the oil. Add a little more oil if necessary.

    Crack open another egg onto the rice and mix until evenly coated. Incorporate your sauce, eggs, mushrooms, and lastly your frozen vegetables. This last step should only take about 5-10 minutes.

Tips & Warnings
  • Chinese Air Dried sausages, Oyster sauce,
  • ake mushrooms, and Soy Sauce can be found at any Asian Supermarket. Stores like Walmart even carry them in their Asian foods aisle.

on 7/18/2009 Pretty good recipe, but you should definitely add mince garlic. Fried garlic is a MUST for any asian dish. You can either fry the mince garlic in oil right before you add the rice or you can fry the garlic separately and then add it in as your final step.
