you are not a big fan of greens but want to cook a healthy meal for a party and impress your guest or yourself, try this easy to cook, colorful, tasty, healthy rice dish
1/2 bunch mint leaves or 1 1/2 teaspoon concentrated mint sauce
1/2 onion ( medium size )
2 small or 1 big green chilly
salt to taste
olive oil or cooking oil
1 bay leaf
1 cinnamon stick
1 spoon cumin seeds
2 cloves
1 garlic clove
Step1
clean and finely chop cilantro/coriander, chilly and mint. if you have a hand blender, much better you can throw all the above three and make a fine paste and put it aside.
Step2
take 2tbsp oil in a skittle/pan big enough to cook 2 cups of rice and fry onion until tender. now add cloves, garlic cloves, bay leaf and cinnamon and fry for another one minute.
Step3
transfer the mint,chilly and cilantro mixture in to the skittle and cook for few minutes or until you see the oil floating on the top (good sign to make sure the mixture is cooked).
Step4
add cinnamon stick, bay leaf, garlic clove, cloves and fry for another 1 minute. now add rice, salt and 3 1/2 cups water and cook covered till tender or till all the water is evaporated. stirr rice twice while cooking
Tips & Warnings
add diced tomato just before adding rice for a little tangy taste
if you have a rice cooker transfer the mixture after adding water in to the rice cooker and set it on cook to cut down on the amount of time the rice takes to cook.
basmati rice looses its aroma if washed before cooking.
