How to make homemade Macaroni and Cheese

How to make the best homemade macaroni and cheese casserole. Every single person I have made this for has been ecstatic about it. It is nicknamed "Ravenna's Disappearing Macaroni and Cheese." I have even received marriage proposals because of it. Really.

Difficulty: Moderate
Instructions

Things You'll Need:

  • half an onion (any kind)
  • two tablespoons of butter or margarine
  • two tablespoons of white flour
  • 1/2 cup of milk (may need more)
  • 4 slices of American deli cheese OR half a bag of shredded cheese of your choice
  • 1 pound box of elbow macaroni (though if you'd rather use Penne or Bowties or something else, it still comes out the same)
  • 1 cup bread crumbs (what usually works best is the Italian seasoned kind that you can buy in a can)
  • casserole pan (they have disposable aluminum ones at the grocery store, which is what I use)
  1. Step 1

    Set oven to 350 degrees.
    Set up large sauce pan on one burner and big pot on another burner.
    Start boiling the macaroni in the big pot.
    Melt butter or margarine in sauce pan.

    While butter is melting, peel onion and cut it up into very small pieces.

    Over Medium heat, Cook the onions in the butter until browned and translucent.

  2. Step 2

    Add the two tablespoons of flour to the onions and mix well. This will form a dough-ey texture. brown this slightly.

    Add the milk and whisk until smooth.

    Add salt to taste, add cheese.

  3. Step 3

    Drain cooked Macaroni and pour into Casserole dish.

    Pour cheese sauce on top of the macaroni evenly. I usually use a spoon to even the level, so all the macaroni is covered.

    sprinkle bread crumbs on top. Bake in oven for 30 minutes.

Tips & Warnings
  • The sauce will thicken the longer it is cooking, so keep adding more milk to it if it thickens up on you (but a little at a time)
  • If sauce thins, add more flour.
  • I usually make a TON of sauce for this, because in my original recipe, there was a lot of uncovered macaroni.
