How to Deep Fry Cinnamon Crispas

Cinnamon crispas are cinnamon-coated flour tortillas, deep fried to a golden brown. Based on Mexican flavors and ingredients, crispas have many applications. Delicious as a snack, they may also be used as a garnish for other desserts, such as ice cream. To deep fry cinnamon crispas, follow these steps.

Things You'll Need:

  • Cooking oil
  • Deep fryer
  • Cinnamon
  • Sugar
  • Flour tortillas
  • Tongs and spoons
  • Sealable plastic or paper bag
  • Paper towels
  • Cookie sheet
  • Sauce, such as honey
  1. Step 1

    Preheat the oil in the deep fryer to 360 degrees F. Vegetable oil is the most commonly used oil for frying cinnamon crispas. While the deep fryer is heating, mix equal parts of sugar and cinnamon in a paper bag or sealable plastic bag.

  2. Step 2

    Cut flour tortillas into strips or wedges. The tortillas may also be cut into bite-size pieces.

  3. Step 3

    Place the tortillas in the deep fryer when the oil has reached temperature. Use a slotted spoon to stir the tortillas so they will not stick together. The tortillas cook quickly so watch them carefully. Cook until golden brown, approximately 1 to 4 minutes.

  4. Step 4

    Remove the tortillas from the deep fryer carefully. Drain on a paper towel. While still warm, place the tortillas in the bag with the cinnamon mixture and close. Shake the bag to coat the tortillas. As an alternative to the bag, place the tortillas on a cooking sheet in a single layer. Sprinkle the cinnamon mixture over the tortillas. Turn the tortillas and coat the other side.

  5. Step 5

    Serve with honey or as a garnish with ice cream. The cinnamon crispas may be stored in an airtight container.

Tips & Warnings
  • Experiment with variations of the cinnamon crispas. Add nutmeg or try powdered sugar as a garnish.
  • Use the cinnamon crispas as the basis for a desert nacho. Start with a crispa, top with fruit and honey.
  • Always follow the manufacturer's recommendations when operating a deep fryer
  • Always have a fire extinguisher available when working with hot oil and deep fryers. Follow kitchen safety rules. Never allow children near a deep fryer while cooking.
