Step1
Locate the halyards and the sheets. The halyards are used to hoist the sails. The sheets are used to control how the sail is positioned so that it catches the wind.
Step2
Use the halyard to hoist the sail so that it is able to be used. You typically want the sail to go all the way to the top of the mast. Having one that isn't all the way will be loose and sloppy. It won't be able to catch the wind as well as a sail that is fully suspended.
Step3
Use the sheets to adjust the angle of the sail in relation to the wind. If you are trying to pick up speed by catching the wind, face the sail so that its broadside is against the wind. This allows the wind to fill the sail and propel the boat.
Step4
Adjust the winch so that you get the exact trim that you want. Most winches have a cleat on top that lets you pull the line but doesn't let it go the other way. Don't force the winch if it doesn't want to give up the line. Doing so could damage it, which would result in your losing some control over the boat.
Step5
Make adjustments as needed. The wind changes direction, so you may need to make adjustments to your sails depending on the direction and speed at which you're trying to travel.
