How to Make Trinidadian Fry Bake

Trinidadian Fry Bakes are West Indian breakfast bread. These are only called Fry Bakes in Trinidad. The rest of the Caribbean calls them Johnny Cakes. Trinidadian Fry Bakes are made of a simple dough that can be fried, baked or roasted. These Fry Bakes can be filled with cheese, sausage or fried fish.

Instructions

Things You'll Need:

  • 4 cups of flour
  • 1 tsp. of salt
  • 4 tsps. of baking powder
  • 1 tsp. of instant yeast
  • ¼ cup of shortening
  • Approximately 1 cup of vegetable oil
  • Approximately 1½ cups of water
  1. Step 1

    Gather the ingredients. Yeast is not mandatory; the Fry Bakes can be made without it.

  2. Step 2

    Combine the salt, flour, yeast (optional) and baking powder.

  3. Step 3

    Add the shortening and put enough water into the mixture so the dough will be smooth.

  4. Step 4

    Lightly knead the dough until the mixture is smooth. Next, cover the smooth dough with a moist cloth and let it rest for a 1/2 hour.

  5. Step 5

    Separate and form the dough into twelve balls after it has set for the alloted time. Now roll each ball on a lightly-floured surface so that they are 3½ inches round and ¼ inches thick.

  6. Step 6

    Fry the dough balls in hot vegetable oil until golden brown on all sides. Place them on paper towels to soak up the excess oil.

Tips & Warnings
  • These Fry Bakes can be frozen and can be re-heated in the microwave.
  • Try stuffing the Trinidadian Fry Bakes with Saltfish Buljol, or Trinidadian salted cod.
  • Always exercise caution when handling hot oil.

on 12/13/2009 I love fry bake!!! My husband is from Trinidad and his mother taught me how to make them! We normally just scramble some eggs and ham together, and eat the fry bake with that! Yum!! Good recipe!
