How to Make Cucumber Sandwiches for English Tea Time

      Use day-old bread that will not turn into mush when the cucumbers are added. The bread must be sliced extremely thin.

      Peel and slice the cucumber, and place the slices on a paper towel. Sprinkle a little vinegar and over the cucumbers, and place another paper towel on top of them. Let the cucumbers "sweat" out the moisture for 30 to 40 minutes.

      Lightly butter the bread. Arrange an overlapping layer of cucumber on top of the buttered bread, and cover it with another slice of lightly buttered bread. Firmly press the two slices of bread together.

      Trim off the crusts with a sharp knife and cut the sandwiches into four triangles.

  • If you can't serve the sandwiches immediately, keep the plate covered with a damp paper towel.
