Sometimes the combination of meat and vegetables in the very same bite can be great. So if you love hearty ground beef and you love the taste of peppers (not to mention the health benefits of the Vitamin C) then you should make stuffed peppers for your friends and family. Here is a great recipe.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 2 lbs. ground beef
  • 1 onion (medium) chopped
  • 3 cups minute rice
  • 6 large peppers
  • 1 jar (32 oz.) tomato sauce
  • Mozzarella cheese to your heart's content
  • Medium sized pot
  • Frying pan
  • Cutting board
  • Chopping knife
  • Baking pan
  • Foil

Step1
Clean the peppers for your stuffed pepper recipe. Cut off the tops of your stuffed peppers. Then remove the seeds and rinse thoroughly. Pat dry with a paper towel and set aside.
Step2
Boil a pot of water. Fill the pot 2/3 of the way full and place over a high flame. Add a pinch of salt if desired.
Step3
Dump the peppers into the boiling water and allow to boil for 5 minutes or until the peppers have a dull green hue.
Step4
Chop the onion semi-fine using your knife and cutting board.
Step5
Brown the beef over a low flame using your frying pan on the stove.
Step6
Stir in the chopped onions, uncooked rice and tomato sauce. Continue to stir until well mixed and heated.
Step7
Stuff the peppers with the meat, rice, sauce mixture. Be sure to pack the peppers well, as more filling adds more flavor.
Step8
Place into the oven at 375 degrees and cover with foil. Bake for 15 to 20 minutes.
Step9
Remove foil from the peppers and top generously with mozzarella. Place back into the oven until mozzarella is golden brown.
Step10
Remove the stuffed peppers from the oven, let cool slightly and serve.
