How to Make Cheddar Chive Scones

Scones are a traditional British pasty, similar to American biscuits. Both are rich and flaky, but scones are sweeter and filled with dried fruit, seeds and spices. Both biscuits and scones are often topped with jams, honey and butters. To give the scones extra flavor, cheeses and seasonings are often added. Instructions

Difficulty: Moderately Easy

Step1
Gather your ingredients, including 2 cups flour, 2 teaspoons baking powder, ¼ cup butter, 3 eggs, divided, ½ cup half and half, 1 ½ cup shredded sharp cheddar cheese, 1 teaspoon chopped fresh chives and 1 tablespoon water.
Step2
Preheat your oven to 425F. Mix the flour and baking powder in a large bowl. Cut in the butter with a pastry cutter (or 2 knives) until the mixture becomes coarse and crumbly.
Step3
Add 2 of the eggs and the cream; beat and blend the mixture with a wire whisk. Add to the flour mixture and stir just until moistened. Stir in the cheese and chives. Shape the mixture into a ball.
Step4
Knead your dough on a lightly floured surface 10 times. Roll it out to a 12 x 6 rectangle. Cut the dough into 3-inch squares, then cut each square in half, diagonally.
Step5
Place the squares on a lightly greased baking sheet. Whisk the remaining egg and the water together until well blended, then brush it over the squares.
Step6
Bake the squares 14-16 minutes or until lightly browned. Serve warm. Makes 8 scones.

Tips & Warnings

  • To prevent your scones from being tough, don't over work your dough when kneading.
